I began working in kitchens at age 16, and have cooked everything from burgers and fries to gourmet organic meals.
In the 90's I was fortunate enough to travel around Africa and learned many techniques and cuisines from other parts of the world.
My passion is cheesecake and other sweet baked goods. I have developed an original cheesecake recipe that is outstanding. I have developed over 40 original cheesecakes from this first recipe. My favorite cheesecake to make is the Almond Joy Cheesecake - loads of coconut and milk chocolate ganache.
My other favorite sweet baked goods to make are Drunken Pound Cakes - using my Aunt Bess' and my mother's pound cake recipe as a starting point, I have created Drunken Cake such as Jack Daniels Whiskey River Pound Cake, George Bailey's Irish Cream Pound Cake, Amaretto Pound Cake, Wild Turkey Bourbon Pound Cake and Malibu Rum Pound Cake and my favorite, Dave's Psychotic Chocolate, Kahlua and Rum Pound Cake.
My bakery uses the finest products available. We opened in 2008 as a result of unemployment when the Organic Market I was the executive chef for had to close due to the poor economy. I could not sit and collect unemployment and I could not find work, so I created this opportunity for myself. I pack the whole bakery up every weekend and head out to markets, fairs and bazaars to sell my wares. We also do a lot of catering and birthday cakes. I work from a building on our home property that is approved by both SC DHEC and SC Dept of Agriculture. I ship cakes world wide; our farthest cake so far was shipped to Ireland.
